Montage Los Cabos

Mezcal is the resort’s signature modern Mexican kitchen, well complemented by the beachfront Baja-inspired cuisine at Marea, on the shores of Santa Maria Bay.

Executive Chef

Fernando Reyes

With nearly two decades of experience, Chef Fernando oversees culinary operations across all dining experiences at Maravilla and Twin Dolphin Club. After attending culinary school in Nicaragua, Chef Fernando began his career at the The Ritz Carton, Half Moon Bay in California. His natural curiosity for taste and distinguished palate then led him to hold senior leadership roles at various Marriott resort and urban hotels. He also has experience in international markets, having worked in China and Turkey.

Jorge Contreras

Chef Jorge assists with culinary operations at the Maravilla Club including Ecco Restaurant, in-home dining, and Mercado.
Chef Jorge attended culinary school in Mexico City and began his career in New York, working for Alain Ducasse Group and March Restaurant – a Michelin-starred restaurant. Prior to Maravilla, Jorge honed his culinary skills at Six Senses in Portugal and prestigious hotels and clubs in Los Cabos, including El Dorado, One&Only Palmilla, and Villas del Mar.

David Lecona

After attending the Instituto Franco Mexicano DF, Chef David spent two decades pursuing his passion for culinary arts, most recently honing his craft alongside renowned chefs at restaurants in the Los Cabos area such as the distinguished Auberge and One and Only resorts. In 2018, Chef David brought his expertise in authentic local cuisine to Twin Dolphin Club, where he works to artfully elevate the dining experience to be both memorable and pleasing to all palates.
